About Me | I was born and raised on Long Island NY, then moved to Houston TX where I was a Police Officer for the City of Houston for a while…. Ended up back on Long Island, and then got married and moved to the South East Cost of Florida, back to NY via Virginia, and finally in the Raleigh Metro area of North Carolina. I’ve always loved to cook, Soups and Sauces my “specialty” and had been making my own barbecue sauce for about 30 years. My friends and family had been using this barbecue sauce for years, bringing their empty jars back for refills. My Wife had been telling me for years that I should "sell the stuff”, but I had a great job with Cisco Systems, and did it more for fun. About 3 years ago my oldest daughter gave me "a ghost chili in a can” a grow your own Ghost Chili plant for Christmas, and I’ll be damned if the thing didn’t grow into a fairly large Ghost Chili Plant that had hundreds of Ghost Chilies. I always enjoyed “Spicy” food, and had heard of ghost chilies, but was scared to death of them! Thinking of what the hell I could do with these peppers, I decided to try making a Hot Sauce (calling it “Crazy Bastard Sauce” while screwing around with it figuring out what would work) BTW My wife HATES Spicy things (Thinks vanilla ice-cream is spicy :-) )…. Anyway I got up enough nerve to start cooking some up and trying it…. It was hot! but bearable, and after several attempts I got one that really had a nice flavor to it. I “tested” it out among friends and family (the ones that enjoyed spicy food) and Brian’s Ghost Pepper Sauce was born. From there I thought I’d try making a medium (Habanero) and Mild (Jalapeño) version… Red, Yellow and Green like a traffic light. It was just a “hobby”. In 2013 I got laid off from Cisco after 18½ years, and had a lot of time on my hands so I decided to actually make the hobby a business….. it took a ton of money, education, dealing with regulatory agencies, etc.. and the love of the sauce to get it done. In November of 2013 Brian’s Artisan Gourmet Sauces was formed (actually a DBA under Herrel Enterprises LLC). I’ve talked to several retail outlets and restaurant chains that are interested, but I want to keep it small and continue to make small handmade batches with my own “home-grown” peppers (I now have small farm on my property growing about 5 different varieties of Chilis). I did develop a “Mild Red Chili Pepper Sauce”, made with Fresno Chilis, that has all the flavor of the Ghost Chili Pepper Sauce without the heat for my wife, and that is the base for the “Customiza...(read more) |
