About Me	Graduated SUNY Cobleskill in the Pro- Chef Curriculum. Worked in Stockbridge Mass at the Red Lion Inn from 89-91 Worked in Stowe, VT at the Edson Hill Manor as Sous Chef from 91-93 Moved to Saratoga Springs in Spring of 93. Head Chef of 43 Phila Bistro for 13 years. Married College Sweetheart, Barbara Crane in Dec, 1994. First Son, Michael born Feb 1996 Second Son, Christopher born June 1998. Had numerous articles and reviews from culinary magazines and newspapers featruing my restaurant and cuisine being tops in the capital district. Taught many cooking classes ans substitute taught at BOCES for 5 years. Coach Basketball and Baseball for both sons. Bought our first home just outside Saratoga Springs in June 2004. Hired as full time CTE Culinary Arts instructor for Saratoga BOCES. Taking classes to obtain NYS certification. Obtained Teacher's Assistant Certification Sept 06. Glens Falls Chapter Amercian Culinary Federation Member since 2000. Vice President from 2001-present. Nominated for Presidency 2008. Teach Cooking classes for the Saratoga Restaurant Supply. My fond memories of being chef at the bistro all these years was meeting and cooking for such famous Sports celebrities as Bill Parcells, Bill Rafferty, Rick Pitino, and many famous throughourbred horse jockeys like Jose Santos and Julie Krone. Also one winter I cooked dinner for Robert Redford and the film crew of The Horse Whisperer which was fiilmed in Saratoga. He had the same Duck Entree 4 nights in a row and I got to serve him one night as I was bartending for extra money. I have bartended, waited tables, dishwashed, cooked, and run kitchens for almost 25 years now. First job was at the Phelps Hotel as a prep cook and then a dishwasher at the SteakOut Restaurant in Manchester. Parents sold the Relax Inn on Crane St. in 1991, moved to Canandaguia while brother went to college at St. John Fisher then moved to Wilmington North Carolina. Father passed away in 2002 after long battle with cancer. Mom lives in Charlotte now just 10 minutes from Jimmy and his wife and son. My wife is a 1st grade teacher at Hadley Luzerne elementary school and a graduate of SUNY Cobleskill and Potsdam. She received her masters in psychology and elementary education from SUNY Plattsbrugh. We enjoy our jobs, eating out at fancy restaruants, traveling, being active with our sons sports and are supporters of Schylerville High School sports progra...(read more)
