Born on March 30, 1979 in Marshfield, Wisconsin, U.S., Jose Pablo Cantillo is a distinguished alumni of Marshfield High School. The son of Costa Rican parents, Roberto Cantillo and Rita Bolaños, Jose, also known as "Joey" during his high school days, later moved to Terre Haute, Indiana, where he was a stellar tennis player for Terre Haute South Vigo High School, leading the team to a State Runner-Up finish in 1996. He graduated from Indiana University Bloomington in 2003, completing a double major in marketing and finance from the Kelley School of Business.

After graduating from university, Cantillo decided to pursue an acting career in New York City. He moved to California in 2003 after landing guest roles on popular television series in New York. His acting career highlights include playing Ricky Verona in "Crank", Miguel in "Cleaner"(2007), and Detective Martinez in "El Chicano"(2018). He is also known for his roles in FX's "Sons of Anarchy" and AMC's "The Walking Dead". In 2019, Cantillo played Detective Martinez in the "Latino superhero movie" "El Chicano".

His filmography spans many years and includes roles in films such as "Elysium"(2013) and "Chappie"(2015). Cantillo also features in some TV series with roles in "Law & Order: Criminal Intent", "Law & Order: Special Victims Unit", and "ER".

In his personal life, Cantillo relocated to California with his wife Kristi and their 7-year-old daughter in 2003. They reside in Santa Clarita, a town that Cantillo compares to his hometown, Terre Haute.
